
Easter is right around the corner, a time when families get together to celebrate and spend time together doing fun things. What is equally important is being able to sit around the dining room table with your family and enjoy a home cooked mean, especially after all the chocolate you’ve been eating.

Orange Baked Ham
Ingredients
1 fully cooked, spiral cut smoked ham on the bone
6 garlic cloves
240 grams of orange marmalade
½ cup Dijon mustard
1 cup light brown sugar, packed
1 orange, zested
¼ cup freshly squeezed orange juice
Directions
Preheat the oven to 180°C
Place the ham in a heavy roasting pan
Mince the garlic in a food processor
Add the marmalade, mustard, brown sugar, orange zest and orange juice and process until smooth
Pour the glaze over the ham and bake for one hour until the ham is fully heated and the glaze is well browned
Serve hot or at room temperature
Banting Friendly Garlic and Herb Marinated Pork Chops with Cauliflower Mash
Ingredients
45ml chopped parsley
45ml chopped thyme leaves
45ml chopped fennel
4 pork loin chops (150-200g each)
300 grams cauliflower florets
30ml butter
400 grams courgettes, julienned
125ml olive oil, for marinade and extra char grilling
4 garlic cloves, crushed
2 dashes salt
3ml dried oreganum
Directions
Mix chopped fresh herbs, olive oil and garlic together
Add chops and coat evenly
Cover and marinate for at least 30 minutes or overnight
Steam cauliflower until just tender, then drain and mash with butter while still hot
Season well, set aside and keep warm
Heat a griddle pan and fry pork chops for 4-5 minutes on each side or until well charred and cooked through
While pan is still hot, lightly char courgette strips
Season and serve chops with cauliflower mash and courgette strips scattered with dried oreganum
Roasted Easter Lamb
Ingredients
½ lamb (5kg)
½ cup white wine vinegar
½ teaspoon dried oregano
½ cup olive oil
1 tablespoon salt
½ tablespoon pepper
Potatoes
Onions
Chopped parsley for garnish
Directions
Marinate lamb in white wine vinegar, oregano, oil, salt and pepper
Refrigerate, covered, for 24 hours
Preheat oven to 180°C
Roast lamb, potatoes and onions, uncovered for approximately 1½ to 2 hours
