Chicken la King

There’s nothing like a good-old fashioned Chicken a la King to enjoy for dinner. We have a quick, easy and low-fat recipe for you to try at home.

You will need:

4 skinless breast fillets
750ml fat-free milk
250g mushrooms (sliced)
30ml paprika
Cornflour mixed in with cold milk to form a paste
1 green pepper (chopped)
125ml old brown sherry
Salt and pepper to taste

Method:

• Poach the chicken for 3-5minutes in a little water
• Cut into bite sized pieces
• Warm the milk in a pan and add the poached chicken pieces, mushrooms and paprika
• When the milk boils, add the cornflour paste and stir until the sauce thickens
• Add green pepper and simmer for 10 minutes
• Add the sherry and simmer for a further 5 minutes
• Season with salt and pepper, and serve with rice
