We all love flapjacks with syrup and cream, so here is a really simple but tasty recipe for your very own home-made low-fat flapjacks.

You will need:
1 egg
30ml castor sugar
5ml vanilla essence
250ml (1 cup) cake flour
10ml baking powder
Pinch of salt
180ml (3/4 cup) skimmed milk
Method
• Whisk together the egg, castor sugar and vanilla essence
• Sift all the dry ingredients together
• Add dry ingredients to the egg mixture, and add milk
• Beat until a smooth batter is formed
• Refrigerate for 30 minutes
• Use a spoon to dollop batter onto a hot pan
• Once bubbles have formed on the side facing up, flip over and cook til brown on the other side.
• Serve with your choice of syrup or jam
