Megan Helsby’s Milk-free Chocolate Cake

Megan Helsby’s Milk-free Chocolate Cake

For those who are lactose intolerant, we have a great recipe which doesn’t need a drop of milk, but is as tasty as your regular chocolate cake.

You will need:

4 eggs

½ teaspoon baking powder (for egg mix)

1 cup flour

1 ½ teaspoons baking powder (for dry ingredients)

1 cup castor sugar

¼ cup cocoa

Pinch of salt

½ cup of boiling water

1 teaspoon vanilla essence

½ cup oil

 

Method

1. Separate your egg whites from the egg yolks

2. Beat the egg whites with ½ teaspoon baking powder until firm, in a bowl

3. In a separate bowl, sieve all the dry ingredients together.

4. To the dry mixture, mix  in the boiling water, vanilla essence, oil and the egg yolks

5. Fold in the egg white mixture

6. Pour mixture into a cake tin and bake for 30 minutes at 350°C

 

Icing:

6 tablespoons margarine

2 2/3 icing sugar

½ cup cocoa

1 teaspoon vanilla extract

4-6 tablespoons hot water

1. Beat margarine with hot water

2. Add icing sugar and cocoa and mix well. Stir in the vanilla essence
