This delicious recipe is great for a dinner for 4. Quick and easy, with chicken cooked just right complemented with a tasty chickpea salad.
For some Jamaican inspired food
You will need:
6 Tbsp olive oil
1 can chickpeas, rinsed
4 sprigs thyme
¼ tsp red pepper flakes
8 skin-on, bone-in chicken thighs
salt and freshly ground black pepper
3 cups rocket with tender stems
1 Tbsp finely grated lemon zest
2 Tbsp fresh lemon juice
Flaky sea salt
Method:
Season the chicken with olive oil, salt and pepper, allow to marinade while you continue with the recipe.
Heat 2 Tbsp of olive oil in a pan. Add chickpeas, thyme, crushed red pepper flakes and cook while continuously stirring for 5 minutes. Place them in a bowl.
Prepare a grill/pan for the chicken. Cook for 8-10 minutes skin side down, then turn over and cook another 4 minutes (or until cooked through).
Toss 3 cups of rocket with stems, grated lemon zest, and fresh lemon juice and add to the chickpeas.
Serve with chicken, sprinkle with flaky sea salt to garnish as well as a drizzle of the remaining olive oil over the whole dish.
